🥗 Southwestern Grilled Chicken Salad & Avocado

This Southwestern Grilled Chicken Salad is full of flavor, protein, and healthy fats. The combination of juicy, spiced chicken with creamy avocado and fresh greens makes it a perfect light lunch or dinner that keeps you satisfied without weighing you down.


🍗 Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tbsp garlic powder

  • 1 tbsp ground cumin

  • ½ tsp cayenne pepper

  • Salt and pepper, to taste

  • Sliced avocados

  • Arugula or your favorite salad leaves

  • Lemon juice, for drizzling


👩‍🍳 Directions

  1. Flatten chicken breasts between plastic wrap using a mallet to about ½ inch thickness.

  2. Rub chicken with garlic powder, cumin, cayenne, salt, and pepper.

  3. Grill or cook in a cast-iron pan for 3 minutes per side, until cooked through.

  4. Slice chicken diagonally into strips.

  5. Serve on a bed of arugula or mixed greens.

  6. Top with sliced avocado and drizzle with fresh lemon juice.
