This Southwestern Grilled Chicken Salad is full of flavor, protein, and healthy fats. The combination of juicy, spiced chicken with creamy avocado and fresh greens makes it a perfect light lunch or dinner that keeps you satisfied without weighing you down.
🍗 Ingredients
4 boneless, skinless chicken breasts
1 tbsp garlic powder
1 tbsp ground cumin
½ tsp cayenne pepper
Salt and pepper, to taste
Sliced avocados
Arugula or your favorite salad leaves
Lemon juice, for drizzling
👩🍳 Directions
Flatten chicken breasts between plastic wrap using a mallet to about ½ inch thickness.
Rub chicken with garlic powder, cumin, cayenne, salt, and pepper.
Grill or cook in a cast-iron pan for 3 minutes per side, until cooked through.
Slice chicken diagonally into strips.
Serve on a bed of arugula or mixed greens.
Top with sliced avocado and drizzle with fresh lemon juice.
