Tex Mex Mix Bowl

The power in this meal: full of protein and fiber!


I can black beans

1 can kennel corn

1/2 green pepper chopped

1 cup salsa

1 can diced tomatoes

2 skinless chicken breasts cubed

2 tbsps chili seasoning mix (or to taste)

1tsp pepper 1/2 tsp salt

optional: red pepper flakes, cumin, paprika, chipotle powder- all depending on taste







Directions: 1 tbsp avocado oil or olive oil.

Heat in large pan, cube chicken and cook thoroughly.

Add green peppers and cook for 3 minutes



Add everything else and stir fry to mix.



Serve in a bowl

Top with shredded cheese

Sour cream

Tortilla strips

Chives or green onions
